View Larger Banana Bread (recipe adapted from this blog)
Makes 1 loaf
I doubled the recipe to make 2 loaves
(Also, I am trying to cut out a good amount of sugar in my diet so I only used half the amount of sugar that the recipe calls for.)
2 cups all-purpose flour
3/4 cup sugar
3/4 teaspoon baking soda
1/2 teaspoon salt
3 (1 1/2 cup) ripe, large bananas, mashed lightly
1/4 cup plain (or honey) Greek yogurt
2 large eggs
6 tbsp of unsalted butter, melted and then cooled
1 teaspoon vanilla extract
1 or 2 packets of raw sugar (optional)
Preheat oven to 350F.
Grease your loaf pan.
Mix the bananas, eggs, yogurt, butter, and vanilla in a large bowl.
Sift the flour, sugar, salt and baking soda into the banana mixture.
*Be sure not to over mix the dry ingredients and the wet ones!!*
Spread batter evenly in your loaf pan and sprikle the raw sugar over the top of the loaf.
Bake for 55 minutes (or until a toothpick comes out clean after being inserted into the loaf).
Let your banana bread cool, slice it, and serve!
*I love to serve my banana bread with crunchy peanut butter or plain cream cheese.*
*The banana bread is still DELICIOUS with just half the amount of sugar!*
